The story of modern pizza begins in the teeming, poverty-stricken streets of 18th-century Naples. The working poor, or lazzaroni, needed inexpensive, filling food that could be consumed quickly. Street vendors provided this in the form of flatbreads with various toppings, such as garlic, salt, oil, and cheese. Italian immigrants later carried their culinary traditions to the United States between 1880 and 1920, where pizza quickly gained traction. In the U.S., it transformed further, becoming a symbol of convenience and comfort food, synonymous with parties and casual gatherings. Technological advances like freezing and home delivery in the mid-20th century further embedded pizza into the modern American lifestyle.

What truly makes pizza a global icon is its remarkable ability to adapt to local palates.
